Marcel Escoffier

Mr. Marcel Escoffier Marcel R. Escoffier is an Associate Professor at the School of Hospitality Management Florida International University in Miami, Florida. He is the author of six books including Management by Menu with Lendal Kotschevar. Mr. Escoffier has over thirty years experience working in hotels and restaurants throughout the United States. Starting at fourteen polishing copper pots, Mr. Escoffier has held virtually every position in today's modern kitchen as well as having been an executive in hotel administration.He has taught at the School of Travel Industry Management at the University of Hawaii as well as teaching in Florida. Mr. Escoffier is the grand-nephew of the great Chef George August Escoffier and is the grandson of both a French chef and a great saloon keeper and German chef on his mothers side of the family.
