The 'Responsible Luxury' program was developed to provide guests the opportunity to take specific measures to protect the environment during the course of their stay at The Whiteface Lodge without sacrificing any of the luxury amenities they have come to expect at this world-class resort.

Industry expert Kate Fish of SPAN560, a consulting company which works with businesses around the world in developing and implementing environmentally-friendly programs endorses Bottois' initiatives in taking 'Responsible Luxury' to the next level.

"The global tourism industry is estimated to contribute close to 5% of global carbon emissions, one of the major causes of climate change," states Fish. "Tourism is also a vital component of the economy around the world, and it depends on stable climate conditions. To help reduce carbon emissions, The Whiteface Lodge relies as much as possible on local suppliers. The timbers and stone used to craft The Lodge were sourced locally. In accordance with this plan, 'Steak and Stinger,' the restaurant at The Whiteface Lodge has re-designed its menu offerings to utilize organic foods and locally grown ingredients purchased at fair market value to reduce the amount of "food miles" from farm to table. Additionally, Steak and Stinger has placed a ban on the use of seafood harvested by over-fishing methods and now serves only safe and sustainable seafood dishes.
