Kachina Southwestern Grill Opens Adjacent to Colorado's Westin Westminster

November 5, 2012 - Colorado's Westin Westminster is pleased to announce that Kachina Southwestern Grill, a unique new Sage Restaurant Group concept serving Native American cuisine, has opened adjacent to the hotel.

Kachina is led by Executive Chef Patrick Hartnett, who has more than 30 years of restaurant experience. The menu takes guests on a culinary journey across the Southwest, with popular items including New Mexico Green Chile, Colorado Buffalo Piccadillo Empanadas, Colorado Striped Bass with red chile popcorn crust and poblano pesto and Beef Tenderloin with spec, sweet potato green chile gratin and smoked chile jus. Kachina also serves a Navajo Taco menu with seven options, including the Gaucho, which features slow braised lamb, smoked tomato aioli, brussel slaw and cowboy beans and the Pueblo, which is made with achiote pork, tomatillo salsa, jalapeno jack and brussel slaw.

Kachina - which offers breakfast, lunch and dinner daily along with Sunday brunch - proudly serves a wide variety of locally sourced cheeses and produce as well as a unique Butcher Program, where Chef Hartnett has partnered with Colorado farmers and ranchers to purchase whole animals, including bison, pigs and goats. The animals are then butchered in-house to offer innovative menu items.

Kachina also pours an extensive array of cocktails, with several flavorful margaritas options and a premium collection of over 50 handcrafted tequilas and artisan mezcals available.

Designed by New York City's crème design, Kachina highlights the unique Southwestern landscape with an infusion of warm colors, natural elements, bold art and an outdoor fire pit.

Denver-based Sage Restaurant Group, led by restaurateur Peter Karpinski, also runs the food and beverage services for The Westin Westminster, which offers more than 30,000 square feet of unique indoor and outdoor event space that can accommodate up to 1,200 people.
