Seminar Lineup - 2008 IH/M&RS

WHITE PLAINS, NY, September 30, 2008. From the latest energy-saving tactics to insight on emerging information technology, the seminar lineup at the 93rd annual International Hotel/Motel & Restaurant Show(R) (IH/M&RS) will provide more than 35,000 industry professionals with information that will enhance guest services and build their bottom line. Taking place November 8-11, 2008, at New York City's Jacob K. Javits Convention Center, the hospitality industry's top gathering place for industry leaders will prove to be a must-attend event for gaining both product knowledge and trend insight.
"While the IH/M&RS continues to serve as the industry's top choice for sourcing new products, it also fulfills a fundamental need for professional development at all levels and in all areas of expertise," said Lynn White, show manager. Education
The program begins on Saturday, November 8, with the Hospitality Leadership Forum, a full day conference addressing such topics as "Securing Payments: What the Payment Card Industry Data Security Standards Mean for Your Hotel," "Contingency Planning in an Uncertain Era," "Changes on the Travel Horizon: Are We There Yet?," "Energy Miser All Stars: Conservation Lessons from the Best" and "Efficiency in Design." Hospitality Leadership Forum program content targets senior level hospitality managers and offers new approaches for human resources, sales and marketing, leadership and more.
Doris Kearns Goodwin, noted historian and author of Team of Rivals: The Political Genius of Abraham Lincoln, will deliver the 2008 Hospitality Leadership Forum keynote address from 12:45 - 2:15 pm, on Saturday. In a presentation based on her #1 New York Times best-selling book Team of Rivals: The Political Genius of Abraham Lincoln, the award-winning historian will inspire the audience with candid discussion about politics and successful leadership strategies, based on history's most compelling personalities. With stories and insight from the successes and failures of Abraham Lincoln, Franklin Roosevelt, John Kennedy and Lyndon Johnson, Goodwin offers timeless lessons that apply to the world of business as well as politics.
The Hospitality Leadership Forum includes 11 programs, including the highly-acclaimed "CEO Leadership Panel" and "U.S. Lodging Industry Summit Panel," both featuring notable hospitality industry leaders. Seminars will continue throughout Sunday, November 9, and Monday, November 10, addressing such topics as "Information Security 101," "Here's Looking at Boutique's Future, Kid. A New Crop of Interior Design Stars Speak," "Retro Marketing: Gain New Revenue on Classic Tactics," "Design on a Dime: Hotel Style," "Eco-friendly Meets Eco-Nomic," "Global FF&E Sourcing: What Everyone Should Know" and "The Importance of Investing Your Assets During a Downturn."
For the first time, a "green" themed keynote presentation will headline the Sunday, November 9, seminar schedule. Christine Ervin, environmental leader and former CEO of the U.S. Green Building Council, will present "Sustainability" from 10:30 am - 12:00 pm. As an environmental advocate whose career spans executive positions across national, state and nonprofit sectors, Ervin is widely credited as a major force in today's vibrant green building markets. During her five-year tenure as president and CEO of the U.S. Green Building Council, Ervin launched the LEED(R) green building rating system, the Greenbuildtm Conference and Expo and numerous governance enhancements to help reach mainstream markets.
Leading foodservice publications and associations will offer restaurant owners and operators a broad seminar lineup, addressing such topics as growing your bottom line and the next generation of restaurateurs. Seminars taking place on Sunday, November 9, include "Food Arts Annual Insiders' Trends Survey," presented by Food Arts; "Building Bottom Line through Sustainability and Utility Efficiency," presented by Foodservice Equipment Reports; and "Writing Menus for Today's Customers With Bottom Line Results For Restaurants," presented by The Culinary Institute of America.
On Monday, November 10, Food Arts magazine will present "Top Restaurateurs' Tastes of Tomorrow: What the New Generation Wants." In addition, Foodservice Equipment & Supplies will present "Lean is Green," an exploration of the notion that lean is really green by looking at ways to make sure foodservice operators leverage their equipment and supplies investment to maximize employee productivity and minimize waste. The Green Restaurant Association will round out the Monday foodservice seminar lineup with "Recycling, Composting and Sustainable Packaging."
Seminars taking place on Sunday, November 9, and Monday, November 10, are free of charge for registered attendees of the International Hotel/Motel & Restaurant Show. Registration, available online at www.ihmrs.com, is $30 through October 9, and $50 after this date.
Demonstrations
The Demonstration Kitchen will return to feature the cooking techniques and flavors of top chefs on Sunday, November 9, and Monday, November 10. Presenting organizations include the ICA-ACF Big Apple Chapter, Food Arts magazine and the Soci'et'e Culinaire Philanthropique. Highlights include a demonstration of stuffed chicken breasts by Jane Brock, chef instructor and wine professor at The Institute of Culinary Education; Kona Kampachi with Chef Ben Pollinger of Oceana Restaurant; Prosciutto di Parma and Parmigiano-Reggiano with Chef Michael Vignapiano of the Art Institute of NYC and Fresh Flavors Catering; chef, author and television host Silvia Barredo demonstrating techniques from her latest book, Decorative Carving; and Chef Jean Jacques Bernat of Provence en Bo^ite featuring classic French bistro dishes. The Demonstration Kitchen has been relocated from the Level 1 Special Events Hall to the main Show floor for the 2008 IH/M&RS.
Events
Hospitality designers from across the globe will gather at the Gold Key Awards for Excellence in Hospitality Design to celebrate outstanding designers in eight categories - Restaurants/Casual Dining, Restaurants/Fine Dining, Lounge/Bar, Best Hotel Design, Guest Room, Suites, Lobby/Reception Area and Spa. Highlighting the 28th annual event will be the presentation of the "Designer of the Year" Award by Gold Key Awards sponsors Interior Design and HOTELS magazines, as well as the Icon of Industry Award, presented this year to Roger Milliken by NEWH, Inc., the Hospitality Industry Network. The Gold Key Awards breakfast ceremony will take place from 7:30 - 9:30 am, on Monday, November 10, 2008, at New York City's Mandarin Oriental Hotel. The event serves as a scholarship fundraiser for NEWH, Inc., the Hospitality Industry Network. Tickets are $75.00 each, and available online at www.ihmrs.com/goldkey.
Debuting this year at the IH/M&RS is the First Cooks Competition, a full-day showcase of the talents of the next generation of cooks and pastry workers. The one-day exhibit of pastry and baked goods, hot or cold desserts, decorated cold food buffet platters, and inedible buffet showpieces such as tallow pieces, bread baskets and fruit carvings, is presented by the Soci'et'e Culinaire Philanthropique. The competition begins at 8:00 am, on Tuesday, November 11, with the judging taking place at 11:00 am. Displays will be available for viewing until 4:00 pm.
