Executive Chef Nick Yanes has prepared an exquisite presentation of dishes featuring aphrodisiac ingredients to heighten and arouse guests' sensual feelings. The Valentine's Day menu features Northwest favorites with urban contemporary twists using aphrodisiac ingredients, including Fennel and Honey Smoked Salmon Cake with trout roe, crème fraiche and petite purple basil; Washington Kumamoto Oysters with cucumber mignonette and green kiwi air; Roasted Garlic Espuma with chive oil, crispy garlic and guanciale; Beef Cheek Wellington with puree of potato, heirloom carrots and beef essence; and Chocolate with mousse, cake, truffle and ganache.
