The hotel's main restaurant "L'Assise" is located in the former court room; it has been re-invented as a unique contemporary restaurant where Chef Frederic Laval combines traditional and modern recipes from the region. The former trial judge section now serves as the restaurant's wine cellar. In the evening, the upper walls of the room are transformed into a projection screen creating a modern ambience for diners in this storied locale. At the glamourous bar "Le Preambule" guests can order delicious cocktails and a variety of wines. Aligned with grandiose columns, the bar features a white wing used as a unique hosting table.
