Hacienda Altagracia Appoints Victor Tafoya as Executive Chef

New Chef Entices with Farm-to-Table Menu Inspired by American Continent

SAN ISIDRO, C.R. March 21, 2016 - The newly opened luxury resort Hacienda AltaGracia located in Costa Rica's lush mountains of Perez Zeledón, and part of the esteemed Auberge Resorts Collection, announces Victor Tafoya as Executive Chef. In this new role at AltaGracia, Tafoya will lead the culinary program for all of the resort's dining outlets including its signature restaurant, Ambar. Drawing on the traditional methods of cooking and flavors of the Americas, dishes from Chef's plant-driven menu will be sourced from neighboring farms.

Tafoya brings a well-rounded culinary background to Hacienda Alta Gracia. In his most recent position Chef Tafoya served as Executive Sous Chef at Rosewood Crescent Hotel in Dallas where he oversaw the Forbes Five-star resort's three restaurants and banquet operations. He also previously held positions as Executive Sous Chef with Rosewood Little Dix Bay, British Virgin Islands, where he oversaw three restaurants and on- and off-site catering events; and as Chef de Cuisine at The Tides Sugar Beach, St. Lucia, West Indies. Drawing from nearby farms and artisanal fisheries, signature dishes include Pan Seared Corvina with cubace beans and tacacos and Fresh Heart of Palm Ceviche.

Chef Tafoya lives in Perez Zeledón with his wife and two daughters.
