Ocean Edge Resort & Golf Club Appoints Tarun Rajain as Executive Director of Food and Beverage

USA, Miami, Florida. February 17, 2021

From the Florida shores to Cape Cod Bay, Tarun Rajain has been appointed executive director of food & beverage at Ocean Edge Resort & Golf Club. Formerly complex director of food & beverage at 24 North and Gates Resort in Key West, Florida, Rajain has over 15 years of experience in managing food and beverage departments.

Prior to 24 North and Gates Resort, Rajain worked his way up to assistant complex director of food & beverage at the Waldorf Astoria Casa Marina and The Reach Resort where he rebranded the resort's restaurant and helped lead it to become one of Key West's most notable dining locations. Rajain's experience is rounded out by his roles as director of outlets at Bahia Mar Beach Resort and before that at Hyatt Regency Pier Sixty-Six as food and beverage manager in Fort Lauderdale, Florida.

"I'm looking forward to bringing my years of waterfront dining experience to the Cape and working with the entire team at Ocean Edge Resort to elevate the already exceptional offerings," said Rajain. "The timing is ideal as it's exciting to be joining the hotel on the heels of the recent launch of Frost Bar and some reimagined culinary experiences to come in time for peak summer season. I'm eager to jump in and am encouraged by a company that sees the value in keeping fresh and trying new things."

As executive director of food & beverage, Rajain will provide leadership in the culinary department, overseeing the resort's multiple year-round and seasonal restaurants, pop-ups, banquet/catering menu development, guest engagement and service. He will oversee the business and operating budget plans to ensure optimum guest satisfaction, sales potential and profitability and also explore new ways to add value to the overall resort experience including brand partnerships.

"Tarun has years of knowledge and experience in the food and beverage departments of world class resorts and we know he will make an excellent addition to our team," said General Manager Robert J. Newman. "This year we are looking to refresh the entire culinary program by bringing new and exciting food and beverage experiences to life at Ocean Edge Resort and we are confident in Tarun's ability to do so."

Food & Beverage: Necessity Breeds Invention

Hotel restaurants were not immune to the devastation that Covid caused in the food & beverage industry last year. In order to survive, many operations expanded their services to include packaged food sales, prepared meals to go, mini pop-up grocery stores, meal kits, takeout, and delivery to make up for lost revenues. These hybrid operations have become increasingly popular in hotels because they maximize limited F&B space and also attract local business. In those restaurants where customers are willing to dine in, there is a greater emphasis on safety protocols. Tables and chairs are spaced far enough apart to provide a sense of safety and comfort between parties. There are also stricter cleaning and disinfecting practices occurring in between dining encounters. In addition, there is a greater emphasis on outdoor dining with its offer of fresh air. The August issue of the Hotel Business Review will report on what some leading hotels are doing to manage their F&B operations in the wake of the pandemic.
