M Social Hotel New York Downtown Appoints Two New Culinary Executives
M Social Hotel New York Downtown announced the appointments of George Seremetis as Director of Food & Beverage and Austin Ishibashi as Executive Chef. Seremetis and Ishibashi will oversee the property's culinary and beverage operations, bringing fresh perspective and proven leadership to the team. Their roles come at a pivotal moment as the hotel prepares for the October 2025 debut of its on-site restaurant, Beast & Butterflies and overall hotel rebrand from Millennium Downtown New York to M Social Hotel New York Downtown. The rebrand marks the hotel's entry into the M Social portfolio as the second U.S. location, following the flagship in Times Square.
Seremetis brings more than a decade of experience in hospitality, beginning his career as a Beverage Manager with the José Andrés Group in Las Vegas. He went on to hold impressive positions in restaurants across the Bahamas and New York before serving as Director of Food & Beverage at M Social Times Square.
As executive chef, Ishibashi has a refined culinary background shaped by his experience in acclaimed restaurants including Uchi Dallas, Benoit New York, and Michelin-starred Claro in Brooklyn. Known for ingredient-driven cuisine and meticulous execution, he brings a disciplined and creative approach to the kitchen.
