Alderbrook Appoints Thomas Kollasch Executive Chef
UNION, WA, April 14, 2006. Alderbrook Resort & Spa announces the appointment of Thomas Kollasch as executive chef.
Kollasch has over 15 years experience as executive chef and in food and beverage management roles in a variety of restaurants, hotels and country club properties throughout Washington state. Prior to joining Alderbrook, Kollasch was the executive chef and manager of the Seaports Restaurant in the Doubletree Hotel in the Seattle area. Kollasch managed all food and beverage operations of the 850 room hotel, including the restaurant staff and room service.
In addition, Kollasch has several years experience within the MTM Luxury Lodging Northwest Resort Collection, including Barking Frog at Willows Lodge in Woodinville, Wash. and Waters, a lakeside bistro at The Woodmark Hotel and Spa in Kirkland, Wash. Kollasch was the overnight chef/saucier at Barking Frog, now featuring executive chef Bobby Moore. Previously, Kollasch was the line a la carte chef at Waters, a lakeside bistro.
"It's exciting to come back to Alderbrook and help guests create the memories I still have from summers I spent at the resort," said Thomas Kollasch. "I can remember eating hot pancakes from the front lawn grill and now I can help every guest at Alderbrook to create their own memories to come back to."
Prior to joining MTM Luxury Lodging's Northwest Resort Collection, Kollasch was the executive chef and general manager of Alyces Restaurant in Woodinville, Wash. and the food and beverage manager at the Carnation Golf Club in Carnation, Wash. Kollasch began his food and beverage career as executive chef of 13 Coins Restaurants in Seattle.
