Evo Restaurant Atop the Hesperia Tower is Open

BARCELONA, Spain, June 26, 2006. Hesperia Tower, Barcelona, is delighted to announce that its flagship restaurant, Evo, is now officially open. Headed by renowned Michelin starred Spanish chef, Santi Santamaria, the restaurant is located in the glass dome on top of the 105m tall Hesperia Tower and offers unrivalled panoramic views of Barcelona.

Chef Santamaria has developed a menu that combines traditional, classic and futuristic cooking methods with Catalonian flavours and local ingredients.

The menu at Evo is based on the concept of natural surroundings and Chef Santamaria has applied the fusion of sky, sea and mountain to his cooking. For example Mar Y Monta~na (sea and mountain) is composed of Blanes shellfish cooked with pork, served with aubergines filled with sweetbreads and porcini mushrooms.

Other examples of dishes on the menu include asparagus filled with anchovies and tender almonds; lobster salad with truffle gelee; coca bread served with razor clams, aubergines and snails; John Dory fish poached with beet-spinach, red peppers and citric fruit emulsion and glazed head of pork.

There are three menu options available, the first, La Carte, offers a choice of two daily special dishes, which includes a surprise dish matched to the guest's choice, followed by dessert and cheeses. The Gastronomic menu offers a variety of courses created only from the freshest ingredients that are in season. The Grand Celebration is the signature menu, which blends numerous courses of the very best of Mediterranean food.

Evo is simple in its d'ecor, with neutral colours and stylish furniture, so not to distract from the main attractions - the view, the food and the wine. The lack of pillars in the restaurant allows guests to experience unobstructed views of the city and to experience, what has been designed to feel like, a gastronomic adventure in space.

Celebrated chef Santi Santamaria has been awarded five Michelin stars in total and was the first chef in Catalonia to be awarded three stars for his Can Fabes restaurant. In addition he has also been awarded two Michelin stars for Santceloni restaurant located in the Hotel Hesperia Madrid.

Santi Santamaria comments on his new project, "Spain is experiencing a culinary boom. EVO is daring on all fronts; for its architecture and for the quality and cooking methods used in the cuisine".
