Spice Island Beach Resort Appoints Pastry Chef

GRENADA, February 14, 2007. Sugar and spice and everything nice....the luxurious AAA Four Diamond(R) Spice Island Beach Resort in Grenada has appointed Phil Warden, an expert in patisserie and confectionery, as the new pastry chef at Oliver's Beachside Restaurant.

"Warden is an excellent asset to our culinary team and will play a key role in expanding our dessert menu offerings," said Sir Royston O. Hopkin, KCMG, Chairman and Managing Director of Spice Island Beach Resort. "He is the perfect complement to our food and beverage team under the direction of Executive Chef Mark Banthorpe," he added.

Warden brings to Spice an elaborate background of training and experience at various establishments in the south of England including the Felix Hotel in Cambridge, the Alexandria Hotel near London, and the Castle Hotel in Windsor. He held a AA rosette standard while employed at all the establishments, an award given to chefs who display innovation, greater technical skills, and consistency in combining and balancing ingredients.

Warden comes from Coningsby, Lincolnshire where he trained at the elite Boston College Lincolnshire, and obtained his GNVQ, an advanced trade qualification in hospitality and management, and his NVQ 3 trade qualification in patisserie and confectionary. During his brief time at Spice thus far, he has been credited with creating such decadent dishes as passion fruit brulee encased in a chocolate and mango mousse, a huge guest favorite.
