Singapore - December 30, 2011 - Celebrate age old traditions of feasting on auspicious dishes and tossing vegetables high in the air with our Yu Sheng platters at Hua Ting and Orchard Cafe. Usher in a prosperous year of the Dragon with a Lion Dance ceremony at the Hotel's main entrance on the first day of Chinese New Year (23 January) at 9.30am.

HUA TING RESTAURANT (Level 2)
The Masterchefs of Hua Ting show off their culinary finesse with a selection of Auspicious set menus filled with lunar favourites such as Stewed soon hock with radish in soya bean paste年年慶有餘 (豆醬蘿蔔燜顺壳鱼), Braised whole abalone (10 heads) with fa cai, dried oysters, bai ling mushrooms and seasonal greens 发财伴三宝 (发财好市扣原只十头鲍白苓菇时菜), Braised sliced piglet with spring onions and ginger富貴又荣华 (姜葱焖猪件), Sauteed fresh coral clams with seasonal greens in spicy sze chuan sauce新春行好运 (川汁炒珊瑚蚌时蔬), Stewed rice vermicelli and crystal vermicelli with minced venison, golden mushrooms and preserved cabbage风调又雨顺 (雪菜金菇鹿菘焖鸳鸯米粉), Crispy roasted duck 金鸭迎新春 (脆皮烧鸭) and other mouthwatering dishes.

$8888 PREMIUM PROSPERITY SET MENU The number 8 sounds like 'prosper' in Mandarin, therefore indulge in Hua Ting's $8888 gourmet feast consisting of premium ingredients from around the globe. Gourmet lovers will be treated to a collection of exquisite Cantonese dishes which includes Braised whole Japan “wo ma” dried abalone (20 heads) with whole top grade fish maw, fa cai and seasonal greens in superior oyster sauce 财运亨通 (日本禾麻廿干鲍扣原只顶级花胶皇发菜), Fresh toro with live Australian lobster “lo hei” yu sheng风生水起 (多罗拼澳洲龙虾捞生), Roasted whole golden suckling pig金猪迎新春 (金陵片皮猪全体), Pan fried fillet of wagyu beef鸿福齐天 (香煎畦高牛扒), Double boiled superior bird's nest with cream of almond in whole young coconut甜甜蜜蜜 (椰皇杏汁炖官燕) and other mouthwatering dishes. These symbolic dishes represent Masterchef Chan Kwok's well wishes for 2012. * Advance order of 5 days is required.

FRESH OUT OF THE WOK Celebrate the spring festival with Masterchefs' recommended dish : Stewed pig's trotter with fa cai in brown sauce on a bed of lettuce (发财红烧猪手). With such an auspicious name 祝横财就手(Zhu Heng Cai Jiu Shou), the tender pig's trotter is not just a feast for the senses but also believe to bring “Good Luck” to the diners. The dish is available from 3 January 2012 and priced at $32 (half) $62 (whole).

Hua Ting's Prosperity Set Menus start from 17 January to 6 February 2012 at $98 or $138 per person (minimum 2 diners), $388 or $398 for 4 persons, $628 for 6 persons, $728 for 8 persons, $888 to $8888 for a table of 10 persons. Reunion Lunch is served from 11:30am to 2:30pm on Mondays to Fridays and 11:00am to 2:30pm on Saturdays, Sundays, Eve of Public Holidays and Public Holidays, while Reunion Dinner is from 6:30pm to 10:30pm daily.

ORCHARD CAFÉ (Lobby Level) The prosperity buffet at Orchard Cafe is filled with premium delicacies such as Roasted duck & chicken, Cantonese pork belly, Braised sea cucumber with Chinese mushrooms, Steamed sea bass with fermented chili, Dried oysters with black moss, Herbal drunken prawns, Double boiled longevity soup with fish maw, bamboo piths, dried scallops and white fungus and other Lunar New Year favourites. Toss to a good year ahead at our “DIY Yu Sheng prosperity corner”. Round off the meal with oriental deserts such as Mandarin peel chocolate fondue with kueh buloh, White fungus with red dates and Red bean soup with glutinous rice ball.

Orchard Cafe's Prosperity Buffet is available from 13 January to 6 February 2012 for lunch at $48.80 per adult, $24.80 per child from 11.30am to 2:30pm, hi-tea at $32.80 per adult, $16.80 per child and dinner is at $58.80 per adult, $29.40 per child from 6:00pm to 10:30pm (except 22 January at $48.80 per adult, $24.80 per child for lunch, hi-tea at $38.80 per adult, $19.80 per child and at $68.80 per adult, $36.80 per child for dinner).

Each table will receive a pair of prosperous mandarin oranges while children will be given red packets with Pineapple Tart Gold Bars from 22 January while stocks last.
