George Washington Hotel Welcomes New Executive Chef

MARCH 15, 2007. The George Washington Hotel-A Wyndham Historic Hotel welcomes the newest member of its management team, Executive Chef Brian M. Collins. After an extensive search, Brian was chosen from a pool of over one hundred highly qualified chefs. Brian will oversee the creation of gourmet fare for banquet events and the hotel's signature restaurant, The Dancing Goat.

Brian and his wife Mary have moved to Winchester from Dana Point, California, where he worked as General Manager and Chef at the VUE Restaurant of the Marriott Laguna Cliffs Resort and Spa. Brian has also worked at the four-diamond Hyatt Regency Scottsdale Resort and Spa at Gainey Ranch in Arizona, and at fine dining restaurants in New Jersey and Pennsylvania. Brian is a graduate of the Culinary Institute of America in Hyde Park, NY, and is an inductee of the Cha^ine des R^otisseurs as a Chef R^otisseur.

Brian joined the hotel's management team on February 19, 2007, and is working on the design of The Dancing Goat's open kitchen, as well as creating banquet menus for the hotel's Catering Department. He is happy to return to his roots on the East Coast and extends an open invitation to sample his unique, inspired creations.
