Executive Chef Timothy Paroulek to Introduce New Seasonal Dishes and Customized Dining Experience

PHILADELPHIA (October 16, 2017) - XIX (Nineteen) Restaurant at the historic Hyatt at The Bellevue , introduces new seasonally-inspired menu items, a new Afternoon Tea menu , and a Chef's Table dining concept for the iconic restaurant located along the Avenue of the Arts in Center City, Philadelphia. The updated menu, executed by Executive Chef Timothy Paroulek, offers a sophisticated twist on classic American dishes crafted with locally-sourced ingredients, such as Kennett Square mushrooms, Pennsylvania meats, and east coast shellfish. The new Tea menu ushers in the cooler season with a warm welcome, offering loose leaf teas, including the signature Bellevue Blend, along with an assortment of tea sandwiches and pastries. While the Chef's Table concept provides a one-of-a-kind prix-fixe menu chosen by XIX's Chef de Cuisine, Jerome Bacle.

The new XIX menu items are a celebration of the fall harvest as well as The Bellevue's 113 years on Broad Street. They are artfully composed to reflect the iconic history of the “Grand Dame of Broad Street,” with interpretations of classic dishes created during the gilded days of The Bellevue's past. XIX signature items include the Lancaster “Free” Chicken a la King (originally created at The Bellevue in the late 19th century) and Crab Normande (a favorite among Bellevue diners in the early 1980s).

Complementing the reimagined Bellevue signature dishes, the restaurant now also offers an array of seasonal menu additions. On the Dinner menu (served nightly, 5:30 p.m. - 10 p.m.), guests will find B listered Heirloom Tomato Strozzapreti Pasta (with chili, herbs, and lemon oil), Monkfish and Shellfish Ragout (with fingerling potatoes, roasted cipollini onion, and saffron confit), and Certified Hereford Beef New York Strip (served with garlic puree, roasted vegetables, and brandy jus). For Lunch (served weekdays, 11 a.m. - 2 p.m.), guests can also now enjoy the O pen Faced Hawaiian Swordfish BLT (with nueske bacon, Boston lettuce, heirloom cherry tomato vinaigrette, chili garlic aioli, and roasted fingerling potatoes); or Roasted Moulard Duck Breast (paired with roasted stone fruit and baby leeks) as part of the Cafe Lunch Table prix-fixe menu.

The Chef's Table concept, slated to launch later this fall, will offer a completely customized dining experience for XIX Restaurant guests. Upon submitting a reservation request, guests will answer a select group of questions (such as occasion they are celebrating, dietary restrictions, etc.) and from there, Chef Bacle will create an exclusive dining excursion unique to the group. From selecting a private dining space for the party, to constructing a three-course menu spotlighting of-the-moment ingredients served family-style, and optional wine pairings selected by the in-house sommelier - the Chef's Table concept is a new endeavor for the XIX team and offers a return to personalized, high-touch service for the local dining community. Tiered Chef's Table pricing will be provided, however final cost will be dependent upon group size, bar selections, and menu. Further details to be announced in the coming weeks.

The new Afternoon Tea menu, available in the cafe at XIX daily between 2 p.m. - 4 p.m., offers an upscale mid-day break and proper tea experience. For $30 per person (excluding tax and gratuity), guests can enjoy a selection of tea sandwiches (turkey with brie, mozzarella with basil pesto, cucumber with shrimp, smoked salmon with cream cheese, and deviled eggs) and tea pastries (including an assortment of scones, macaroons, eclairs, and fruit tarts). Black, green, herbal, and white teas will also be served, such as the Bellevue Blend (an exotic blend of black and Ceylon tea leaves infused with jasmine and rose), the Mad Hatter's Tea Party (with passion fruit, pomegranate, and vanilla), Gyokuro Asahi Green Tea (fresh and sweet aromatics with a grassy complex palate), and Organic Jasmine Pearl (a hand-picked white tea, with medium character and rare finesse). Or make the afternoon extra special with one of the new tea cocktails , such as the Blended Bellevue , a strawberry flavored cocktail made with the signature Bellevue blend tea with strawberry, mint, and vodka.

For a refined happy hour or a nightcap, guests can enjoy fireside cocktails in the handsomely appointed bar at XIX. Signature cocktails include the Highball in the Sky (whiskey, lime juice, bitters, and mint), High Tea on The Avenue (gin, earl grey tea, lavender syrup, egg white), Magic Champagne Flute (pear vodka, pom liquor, lemon juice, basil), and the Clover Club (blue coat gin, lemon juice, egg white, raspberry syrup) a staple from the historic Bellevue menu.

As the winter season approaches, XIX also plans to introduce a signature Hot Chocolate Bar . Guests will be invited to craft the perfect hot chocolate with decadent Valrhona chocolate and select from a wide range of toppings like coconut, candy cane, cinnamon, caramel, and house-made marshmallows. Adult chocolate-lovers will also be able to add Mulled red wine, Baileys Irish Cream, Kahlua, Frangelico, Grand Marnier, or Peppermint Schnapps for a spiked sweet treat.
