Salmon Falls Resort and Edgewater Inn Restaurant & Marina Announce New Chef Appointments

Jordan Swiler has been appointed executive chef for Salmon Falls Resort, an intimate full-service waterfront resort in Ketchikan, Alaska, and Hamodi Siam has been appointed executive chef at its sister property Edgewater Inn Restaurant & Marina. Swiler and Siam will oversee the culinary operations, development and programming at Salmon Falls Resort and Edgewater Inn Restaurant & Marina, respectively.

Prior to joining Salmon Falls Resort, Swiler served as the executive chef at Café and Bar Lurcat in Minneapolis since 2016. Previously, he helped open The Continental in Naples, Florida, where he spent two years as an executive sous-chef. Swiler started his career as a line cook and sous-chef at Café and Bar Lurcat. Throughout his career, Swiler has garnered extensive skills in culinary and hospitality management. He graduated from the University of Missouri with a degree in food science.

Swiler is already underway with new menu items at the resort's signature restaurant, Timbers. The restaurant is a favorite gathering spot for families and couples pre- and post-outdoor adventures. The menu features an array of locally sourced Alaskan seafood and other seasonal specialties. New standout dishes include Hump Island Oysters; seafood chowder with lemon and breadcrumbs; smoked whitefish toast with cucumber, celery, fresh herbs and pickled red onion; and Alaskan salmon with warm Yukon Gold potato salad, sauteed spinach and beurre blanc.

Siam brings more than 30 years of culinary experience to Edgewater Inn Restaurant & Marina. Most recently, he served as the dining room manager at Fellowship Square in Tucson, Arizona. Throughout this career, Siam has worked at several notable resorts, including Fairmont Scottsdale Princess, JW Marriott Scottsdale Camelback Inn Resort & Spa, and Boulders Resort and Spa Scottsdale. In addition, Siam has been involved in all aspects of personal catering and has serviced clients such as Governor Fife Symington, former Vice President Dan Quayle, Dr. Dre, and more. He has also taught at Scottdale Culinary Institute and the Arizona Culinary Institute. Siam graduated from the Scottsdale Culinary Institute with top honors.

Salmon Falls Resort is open seasonally and will re-open for the 2021 season on June 1. In addition to the resort's popular guided and self-guided fishing excursions, Salmon Falls Resort will offer new adventure, culinary, and cultural experiences for guests. Standout offerings include fishing expeditions to remote locales, flightseeing float plane tours to the Misty Fjords National Monument and salmon cooking demonstrations paired with local microbrews. All-inclusive room prices start at $350 per night.

Salmon Falls Resort's sister property, Edgewater Inn Restaurant & Marina, is located 15 minutes away in the downtown Ketchikan area and is open year-round. Rates start at $180 per night. Popular activities for both resorts include hiking, kayaking, bear spotting, rainforest ziplining, whale watching and shopping from local artisans.

Guests of Salmon Falls Resort have access to the Timbers on-site restaurant and lounge, also open to the public, from 11:00 am to 10:00 pm seven days a week
