Rome Cavalieri, A Waldorf Astoria Hotel is pleased to welcome Executive Chef Nicholas Cuomo. Cuomo will oversee the new culinary direction of the hotel's all-day fine dining restaurant, Uliveto Restaurant & Terrace, as well as the Tiepolo Lounge, Patio 101 summer restaurant, Pool Bar and the private event food offering. Under Cuomo's direction, the Uliveto will offer guests dishes inspired by his Mediterranean heritage using seasonal and local ingredients for simple, yet surprising, tastes and flavors.
Cuomo brings a decade-long culinary career to his Executive Chef role at Rome Cavalieri. He previously held high-level positions at the most luxurious establishments in Europe and Middle East, including the DoubleTree by Hilton Marjan Island in Ras Al Khaimah, UAE, the One & Only Royal Mirage in Dubai, and the Winged Foot Golf Club in New York, boasting achievements such as restructuring kitchen operations, reducing food costs, improving staff retention, and enhancing customer satisfaction.
Not only is Cuomo well-versed in the culinary styles and flavors sought after by today's globetrotters, but he also has a strong educational background with a Master's degree in Tourism and Hospitality Management from the Rome Business School, complemented by an Advanced Diploma in Food Production & Preparation, and holds various certifications in HACCP and food safety management. Chef Nicholas Cuomo has consistently demonstrated adaptability, dedication, and a passion for creating memorable dining experiences.
