Whitetail Names New Food & Beverage Director
Daryl Billig to Enhance Lakefront Resort's Dining Experience
MCCALL, ID, July 17, 2006. Daryl Billig has been named food and beverage director of the Whitetail Club & Resort, a luxury lakefront property situated on 1,200 pristine acres in Northern Idaho, owned and operated by San Diego-based Manchester Grand Resorts.
Billig takes charge of all food and beverage operations for this popular wilderness retreat on Payette Lake in McCall, a small mountain town 100 miles north of Boise.
In his new position, Billig will oversee two restaurants, including the resort's celebrated fine dining venue, Narrows Restaurant, plus all catering operations for the property, which has nearly 13,000 square feet of meeting facilities.
According to Whitetail President John Sabala, Billig will work closely with Executive Chef David Campbell to enhance the overall dining experience throughout the resort. "Daryl has extensive expertise in the food and beverage industry, especially in the culinary arena," Sabala said. "We are confident that he will help take our food and beverage operations to even higher levels of excellence."
Billig was previously based in Honolulu as an executive sous chef with Pride of Aloha, an American-based cruise ship that services the Hawaiian Islands. With nearly 20 years of industry experience, he has also worked as a food and beverage director/executive chef for Intercontinental Hotels & Resorts, Holiday Inn & Suites and Ocean Properties Resorts, and as an executive chef of Meristar Hotels & Resorts. He is a graduate of the prestigious Culinary Institute of America in Hyde Park, NY.
A long celebrated piece of McCall history, Whitetail was originally opened in 1948 as the Shore Lodge. In 1993, San Diego-based Manchester Grand Resorts purchased the resort and in 1999 embarked on an ambitious $25 million renovation - creating a luxurious resort and country club. Following the refurbishment, the number of rooms went from 116 to 77, turning Whitetail into an all-suite resort; and the level of service and number of amenities and luxuries increased dramatically.
Resort highlights now include: 18 holes of championship golf; two tennis courts; a racquetball court; boating and water activities; two restaurants (fine dining and casual venues); a bar adjacent to the lobby; a sandy beach; a swimming pool; two expansive hot tubs; a 45-seat movie theater; facial and massage treatment rooms; a sauna and state-of-the-art fitness facilities.
Despite its secluded location, Whitetail is remarkably easy to reach. Eight major airlines service Boise International Airport. From Boise, travelers enjoy a beautiful two-hour drive up Highway 55 - along the Payette River - to Whitetail Club & Resort.
