Mainsail Lodging & Development Appoints Executive Team for Newly Opened Fenway Hotel

The recently opened Fenway Hotel, the latest property from Tampa-based Mainsail Lodging & Development, announced today new additions to the hotel's executive team, including Adam Hyatt, executive chef, and Nancy Calabrese, director of sales. Opened earlier this month, the 83-room historic hotel will be overseen by newly appointed general manager Shawn Routten, a veteran of Mainsail Lodging & Development.

With more than 15 years of experience in the hospitality industry, general manager Shawn Routten recently celebrated his 10-year anniversary with Mainsail Lodging & Development. He began his career with Mainsail as a front desk host at Mainsail Suites Hotel & Conference Center, before working his way up to front office manager. He was later promoted to opening front office manager at the Epicurean Hotel in 2013, where he further distinguished himself and was promoted in 2017 to director of operations. During his time at the Epicurean, Routten played an integral role in the achievement of many awards and recognitions, including Marriott's Best New Hotel of the Year in 2013, Marriott International Hotel of the Year in 2017 and the Conde Nast Traveler Reader's Choice Awards “Top 10 List of Best Hotels in Florida” for the past several years.

Adam Hyatt has been appointed executive chef of HEW Parlor & Chophouse, the Fenway Hotel's signature restaurant. With more than 14 years of culinary experience, Hyatt was most recently chef partner at Tampa's popular Platt Street Borough. Earlier in his career, he was executive chef partner at Roy's Hawaiian Fusion in Jacksonville, where he trained with James Beard award-winning chef Roy Yamaguchi, who remains a close friend and mentor to Hyatt. During his seven years with Roy's, he was also inducted into Best Chefs America (2013). Hyatt has also held various brand development and operations positions at Ciccio Restaurant Group and was sous chef at Mystic Fish in Palm Harbor, Florida. He now directs the culinary team at HEW and is the creative force behind the restaurant's unique breakfast, brunch, lunch and dinner menus.

As Fenway's director of sales, Nancy Calabrese handles training and supervision of the sales and event planning team to generate and execute meeting business in the corporate, government, sports, and social market segments. With more than 15 years of accomplished hotel experience, Calabrese is trained and certified in numerous Marriott brands. She was most recently senior event manager at The Mayflower Hotel, a Marriott Autograph Collection hotel in Washington, D.C., where she independently managed 245 groups yearly. Prior to this, Calabrese was event manager at Mayflower Renaissance Hotel, Washington, D.C., where she led the successful CI/TY transition (Marriott's sales and events software) to The Mayflower Hotel, a Marriott Autograph Collection hotel. Calabrese obtained her bachelor's degree in Communication Studies and a minor in Tourism & Hospitality Management at James Madison University in Harrisonburg, Virginia.

Originally opened in 1927, Fenway Hotel is an icon of the jazz age, playing host to notable explorers, artists, politicians, musicians and living legends in its time as an operating hotel. Considered to be the “most historically valuable structure” in Dunedin, Florida, the hotel was also home to the first radio station in Pinellas County, which began broadcasting from the roof of the Fenway in 1925. Today, the new hotel features 83 guest rooms and suites; HEW Parlor & Chophouse, featuring chophouse cuts, chef-driven seasonal preparations and extensive whisky and Scotch collection; Hi-Fi Rooftop Bar overlooking St. Joseph Sound; a combined 10,000 square feet of indoor and outdoor event space, featuring the Caladesi Ballroom with water views; a resort-style pool; and an expansive front lawn ideal for croquet, badminton and special events.
