Arrabelle at Vail Square Welcomes New Culinary Team

FEBRUARY 19, 2009 - The Arrabelle at Vail Square, A RockResort, proudly announces the appointment of a new culinary team. Rob Dorey has been appointed food and beverage director and Darrell Jensen has been appointed executive chef of the brasserie, Centre V.

"We are delighted to welcome Rob and Darrell to our culinary team," said Jeannette Schulze, general manager of The Arrabelle. "Their talent and creativity will ensure that patrons of Centre V and our in-room dining guests continue to enjoy superior European dining."

Dorey joins The Arrabelle team from his position as the food and beverage director of Colorado's award-winning Snowmass Club. Prior to the Snowmass Club, Dorey served as the bar manager at Aspen's five-star, five-diamond hotel, The Little Nell. Originally from England, Dorey completed six years of training in the restaurant industry before heading to Colorado in 2002. As The Arrabelle's food and beverage director, Dorey will oversee all aspects of Centre V and in-room dining.

Jensen, a native Californian, completed an apprenticeship at Los Angeles' Century Plaza Hotel and Tower where he was recognized as one of the top apprentices in the country. Following his apprenticeship, Jensen worked at several prominent Los Angeles restaurants, including the award-winning Citrus. After gaining ten years of culinary experience, Jensen took over as the executive chef at Vail Resorts^a' exclusive, on-mountain Game Creek Restaurant. After just two years at Game Creek, Jensen was dubbed the "Lamb Guru of Vail," and worked alongside celebrity Chef Michael Chiarello. As executive chef, Jensen will create a deliciously traditional European cuisine at The Arrabelle's French-brasserie, Centre V.

The new team is quickly making their mark on Centre V and the community by creating a "Communitini." Five dollars from the sale of each martini will benefit the Vail Valley Charitable Fund, which helps residents of the Vail Valley who have overwhelming financial needs due to a medical crisis. Dorey and Jensen are also implementing RockResorts' sustainable cuisine initiative, "Appetite for Life," by serving organic and sustainable menu options.

Guests who indulge in the Old World charm of Centre V will enjoy traditional European cuisine in an elegant setting. Tempting menu options include melting raclette, duck confit and steak frites. Open for breakfast, lunch, and dinner, guests can also partake in Centre V's savory delicacies in the privacy of their own room, as in-room dining options are available 24 hours a day, seven days a week.
