BANGKOK, November 9, 2005. Sofitel Metropole Hanoi unveils the mysterious tastes and smells of the wonderful world of spices, with a discovery tour by the world's leading chefs at the first ever Festival Aromes 2005 (Aroma Festival 2005) from December 1 to 4.

Flown in direct from Paris - feted French chef Alain Soliv'er`es, essential oil researcher and wine expert Franck Michel together with Sofitel Metropole Hanoi's own executive chef Didier Corlou - join forces to create culinary magic and add spice to everyday life.

Spice has played an important historical role for centuries, doing much more than simply imparting flavour. A 'secret' spice trade flourished for years, and to this day is still cultivated by many cultures and modern-day herbalists. Spices and herbs have also been used for generations as preservatives, colorants and medicinal remedies.

But what exactly is spice? How does it transform from its raw material to use in the kitchen? What is its role in the evolution of the world's leading culinary traditions, especially in Vietnamese cuisine?

Explore the answers to these questions and more at the Festival Aromes 2005. The distinguished panel of experts will help all in attendance understand how and why spices flavor and scent the world around us.

Other treats include an exclusive chance to taste the exquisite cuisine of Alain Soliv'er`es, from the three Michelin star restaurant Taillevent in Paris. He has established himself as one of Paris' leading chefs, and his culinary art is recognized as among the best in Europe. As a "researcher" of aromas and new products, he will introduce participants to wonderful dishes scented with white truffles from Alba, Italy or fresh Cod from Bilbao, Spain.

Oyster season will also be celebrated during the event with fresh and unique Tsarkaya products from St Kerber.
