Triangle Grille to Become Casual Fine Dining Destination in Lexington

Executive Chef Joshua Winslow Creates Dynamic Menu That Features Locally Produced Ingredients

LEXINGTON, KY, - February 10, 2010 - Triangle Grille, named after its unmatched views of Lexington's renowned Triangle Park and its spectacular illuminated fountains, is heating up to be the city's newest fine dining destination. To become the signature restaurant inside the recently renovated Hilton Lexington/Downtown, Triangle Grille will feature traditional and innovative dishes that will change seasonally created by Executive Chef Joshua Winslow.

Triangle Grille, to open on Monday, March 1, will introduce a winter menu that showcases artfully prepared dishes for dinner including fresh mussels steamed in Kentucky Ale with roasted garlic, shallots, tomatoes and fresh herbs; a grilled 10-ounce bone-in pork chop with a chipotle sorghum glaze served over Kenny's Farmhouse cheddar grits with green apple Woodford Reserve chutney; and a coriander encrusted sea scallops dish with chive potato hash and sweet corn cream. Lunch at Triangle Grille will feature lighter fare including a bibb lettuce salad with seared jumbo tiger shrimp, dried cranberries, candied walnuts, Kenny's Farmhouse cheddar cheese served with a pomegranate sorghum vinaigrette; a grilled chicken breast topped with ham, sauteed Sheltowee Farms gourmet mushrooms and Kenny's Farmhouse cheddar cheese served on a fresh Sunrise Bakery roll; and beef brisket braised in Kentucky Ale served with Woodford Reserve barbeque and horseradish cream on a toasted egg bun. Triangle Grille also will offer a diverse selection of handmade desserts including blueberry and Stoli Vanilla Vodka crème brulee, coffee cake drizzled with Chantilly cream and a trio of seasonal house-made sorbets.

“I'm thrilled to unveil a menu for Triangle Grille that includes dishes that feature local ingredients and reflect my love for the culinary arts,” said Executive Chef Joshua Winslow. “As a Lexington native, it was important to me to create an exciting and varied menu that will change seasonally depending on the availability of locally grown produce. Our initial menu of regional American cuisine in a fine yet casual setting is currently missing in the city.”

Lexington-born Executive Chef Joshua Winslow began his culinary career in 1992 as a line cook at Lexington's Merrick Inn. After he graduated from high school, Joshua moved to Charleston, S.C., where he received a degree in culinary arts from Johnson & Wales University and cooked under the guidance of Donald Barickman, one of the South's most prominent chefs. He moved to Philadelphia after graduation and worked for world renowned chef Georges Perrier at five-star restaurants Le Bec Fin and Brasserie Perrier. Joshua's culinary skills continued to develop while working in Manhattan at some of the city's most esteemed fine dining establishments including L'Absinthe Brasserie and Gramercy Tavern. He returned to the Bluegrass in 2005 and most recently was the executive chef at Murray's and Merrick Inn.

Triangle Grille will continue the very popular tradition of a lunchtime pasta buffet on Thursdays. Pasta Bar, from 11:00 a.m. to 2 p.m., will still feature various types of pasta and an assortment of meats and vegetables as well as red and cream sauces. After guests have filled their skillets with pastas, meats, vegetables and sauces, chefs will prepare and dish up each creation.

The elegant interior of the 3,711-square foot Triangle Grille, designed by Atlanta firm Design Continuum, Inc., features a vibrant color palate of greens, reds and pinks. Bright floral patterns on fabrics and carpeting can be found throughout the 134-seat main dining and 32-seat private dining areas.
