Jacques Melac Appointed Outlets Manager - Hyatt Carmel Highlands

February 10, 2011 - Hyatt Carmel Highlands announces the appointment of Jacques Melac as new Outlets Manager for the luxury oceanfront hotel. Melac brings 24 years of hospitality management experience to his new position where he will be responsible for overseeing food and beverage outlets at Hyatt Carmel Highlands, including the hotels award-winning Pacific's Edge restaurant, the newly renovated Sunset Lounge and Lobos Lounge.

A native of France, Melac began his career in hospitality as the manager of Patisserie Boissiere, the Carmel-based fine pastry shop. Following, he opened a fine dining French restaurant, Melac's Restaurant, in Pacific Grove. He owned and managed the restaurant for ten years, crafting an exceptional service program as well as an award-winning international wine list at the restaurant. In 1998, Melac opened Cepage Wine Bar, where he held weekly wine tastings and wine seminars for private parties.

Melac joins Hyatt Carmel Highlands from Rancho Cellars, his own fine wine retail store in Carmel. There, he helped Rancho Cellars become the largest and leading wine merchant in Monterey County for 12 years. Melac worked closely with over 50 distributors and wineries to ensure the quality and integrity of the wines available at Rancho Cellars.
