Copperleaf Restaurant & Bar at Cedarbrook Lodge Completes Expansion

Award-winning Seattle farm-to-table restaurant renovates dining room and bar

SEATTLE - July 18, 2012 - The award-winning quintessentially Northwest Copperleaf Restaurant & Bar at Cedarbrook Lodge announces the completion of its recent expansion and enhancement of its dining room and bar.

“Since our inception just two years ago, we've seen the growing demand to expand our restaurant to best accommodate both our loyal diners and those who are new to the Copperleaf experience,” said Roy Breiman, culinary director at Cedarbrook Lodge. “Copperleaf is positioned as a localvore's culinary destination, and our expansion not only shows the enhancement of our cuisine, but also the growing demand for locally sourced ingredients.”

The two-year-old restaurant has expanded its dining room to seat 52 guests and its bar to accommodate 35. Complemented by the ambiance of its large fireplace and display of original Northwest art and accent pieces, Copperleaf offers an intimate and inviting environment. Copperleaf's expansion was overseen by GGLO of Seattle and features custom-made furnishings including banquettes made of 100-percent bamboo fabrics; handcrafted Meyer Wells Silver Maple and Red Elm tables constructed from locally salvaged urban trees from the Snoqualmie Valley, including a large Tuscan communal table in the bar; and local hand-blown glass sculptures.

Led by renowned Culinary Director Roy Breiman and Executive Chef Mark Bodinet, Copperleaf is defined by fine, yet approachable, food and wine experiences that emphasis responsibly harvested, locally sourced farm-to-table Northwest cuisine.

In addition to many herbs and vegetables grown in Cedarbrook's onsite Chef's garden and mushroom patch, Copperleaf sources most of its menu from within 100 miles of the restaurant. Additionally, Copperleaf's wine list is comprised of more than 85 percent local and regional varietals from top Pacific Northwest vintners, including more than 24 biodynamic and organic varietals and Copperleaf's private label red wine.

Copperleaf was named a 2011 Top 10 New Restaurant by Gayot, as well as Best New Restaurant to open in 2010 by Seattle Magazine readers.
