Shawmut Design and Construction Completes Chevalier at the Baccarat Hotel

High-end French brasserie opens in New York City with help of award-winning construction management firm

Shawmut Design and Construction, a $1.2 billion national construction management firm, today announced the completion of Chevalier, located on the ground floor of the Baccarat Hotel in New York City. The new restaurant features a modern design with quintessential French aesthetics to reinvent the classic Parisian brasserie in the heart of Midtown Manhattan.

Shawmut adorned the triple-height space with stained, wire brushed pine on the walls and ceilings, metal and white opaque glass skylights, and a splashy column of red resin at the entrance. The team's scope of work spanned 18 weeks and involved a fit out of the existing space with all new mechanical, electrical, and plumbing systems to accommodate an 80-person dining room, bar area, and La Cour, a private, 14-person chef's table.

“It was an honor to collaborate with Chef Shea Gallante to bring this sophisticated Parisian experience to New York's dining scene,” said Randy Shelly, vice president of Shawmut. “Our team was able to plan for the logistical challenges in the busy, tight space to ensure the Chef's vision came to fruition.”

The team worked with designer Stephen Sills Associates on the restaurant, named for longtime Baccarat creative director George Chevalier. This completion represents the latest in Shawmut's hospitality work, including Danny Meyer's Porchlight and Andrew Carmellini's Little Park at the Smyth Hotel in New York, and PAUL Bakery in Boston. Current work includes a $175 million renovation of the InterContinental New York Barclay.
