Grande Lakes Orlando, the 500-acre luxury resort destination in the headwaters of the Florida Everglades anchored by The Ritz-Carlton Orlando, Grande Lakes and JW Marriott Orlando, Grande Lakes, is excited to welcome Chef Graeme Little as JW Marriott Orlando, Grande Lakes new Executive Chef. Chef Little brings with him nearly 20 years of culinary expertise, garnered from his extensive experience in luxury hotels.

Chef Little joins JW Marriott Orlando, Grande Lakes from the esteemed Fairmont Austin in Texas, where he has served as Executive Chef since December 2021. At Fairmont Austin, he managed an impressive $62 million food and beverage revenue operation, overseeing 1.1 million covers annually across 140,000 square feet of meeting and event space and eight unique dining venues. His tenure there was marked by dynamic menu developments, the launch of two new dining concepts in 2023, and the successful implementation of leadership development plans and goals for over 125 culinary and stewarding colleagues.
Prior to his Executive Chef role, Chef Little held several key positions at Fairmont Austin, including Executive Sous Chef and Senior Banquet Chef. His culinary journey also included roles at Fairmont Royal York in Toronto, ON, and Fairmont Pacific Rim in Vancouver, BC. Each position has seen Chef Little excel in driving team engagement, fostering internal promotions, and achieving outstanding financial and guest satisfaction results.
