Amy Mixon Joins Islander Resort as New Executive Chef
The newly transformed Islander Resort announces the appointment of Amy Mixon as Executive Chef. Bringing more than 20 years of experience to the position, Chef Mixon will oversee the resort's four on-site dining experiences, including the new Drift on the Beach, Sandy's Poolside Bar, and Coccoloba oceanfront food truck.

Known for creating innovative dining experiences that resonate with varied palates, Chef Mixon will blend local ingredients with international inspiration to craft distinct food and beverage concepts. She will oversee the design and development of all menus, ensuring they reflect the resort's culinary vision and deliver a cohesive, exceptional dining experience across all venues.
Chef Mixon's culinary background spans over two decades, with her most recent role serving as Executive Chef at Westminster Communities of Florida, a non-profit organization serving communities throughout the state. Prior to that, she held positions at hotels and resorts throughout the United States, including the W Atlanta-Downtown and The Amelia Island Club in Amelia Island, Florida.
During her 12 years at The Amelia Island Club, Chef Mixon advanced through leadership roles to eventually become the Executive Sous Chef of the 300-member club in its entirety, overseeing three on-site dining venues.
