Hutton Hotel Welcomes Chef Lucas Fleming as New Executive Chef

Hutton Hotel, Nashville's original boutique hotel known for its artist-forward spirit and creative energy, is proud to announce the appointment of Lucas Fleming as its new Executive Chef. A celebrated figure in the local culinary scene, Chef Fleming brings over a decade of experience leading some of the city's most lauded kitchens. As Executive Chef, he'll oversee menu development and culinary operations for the hotel including Evelyn's, the hotel's signature restaurant, Analog, the hotel's entertainment venue, and banquets and conferences.

Prior to joining Hutton Hotel, Fleming was the Executive Sous Chef at The Joseph, a Luxury Collection Hotel, Nashville, where he contributed to menu creation for all F&B outlets, banquets, and catering. Before his role at The Joseph, Fleming held positions at a range of Music City hospitality concepts, including Conrad Nashville, Troubadour Golf and Field Club, Bobby Hotel, Von Elrod's, Strategic Hospitality, as well as Perry Lane Hotel, a Luxury Collection Hotel, Savannah.

"What drew me to Hutton Hotel was the opportunity to cook with intention in a space that values connection as much as cuisine," said Executive Chef, Lucas Fleming. "My vision is to honor the region's rich culinary heritage while elevating our dishes at the hotel. We're creating menus that feel rooted in Nashville but also speak to a more adventurous palate—where every ingredient has a purpose, and every plate tells a story."

Fleming's new menus at Evelyn's will feature seasonal, locally sourced dishes that nod to Tennessee tradition while embracing modern culinary techniques. Highlights will include house-made pastas, vegetable-forward small plates, and inventive takes on Southern staples—all paired with a curated wine list and craft cocktails that reflect the restaurant's soulful ambiance.

Opened in September 2023, Evelyn's is an Americana-inspired restaurant named in honor of Evelyn Sharpe, a vibrant figure in the city's cultural fabric. Sharpe was known for opening her home to artists, writers, and performers—offering meals, encouragement, and a sense of belonging. Building on this legacy, Chef Lucas Fleming will debut a refreshed menu that blends elevated Southern fare with global influences, honoring Nashville's rich agricultural roots while introducing bold, new flavors.

Chef Fleming's arrival marks the latest milestone in Hutton Hotel's ongoing renovation project, which will mark its completion this fall as a reimagined property from top to bottom. With newly redesigned spaces, refined amenities, and a renewed focus on culinary and cultural experiences, Hutton continues to define the creative spirit of Music City.
