The Pearl Hotel Appoints Francisco “Cisco” Pomalaza as Executive Chef
The Pearl Hotel, a luxury boutique property and the crown jewel of the Rosemary Beach® community, announces a new chapter for its signature dining destination, Havana Beach Bar & Grill, under the creative direction of newly appointed Executive Chef Francisco "Cisco" Pomalaza. Drawing on a globally inspired culinary legacy, the celebrated veteran chef brings his refined expertise to the distinguished eatery with plans to debut a thoughtfully refreshed menu in early 2026 - one that honors the restaurant's roots and its homage to El Floridita, the famed Havana haunt of Ernest Hemingway.
Leveraging an impressive career spanning award-winning upscale and fine dining restaurants, Executive Chef Cisco will helm Havana Beach Bar & Grill's three distinctive dining avenues. Influenced by the vibrant spirit of old-town Havana, the acclaimed AAA Three-Diamond restaurant—also a recipient of Wine Spectator's Award of Excellence—celebrates the art of savoring life, indulging in sumptuous cuisine, and enjoying drinks of distinction. Guests can savor reimagined delights in the Main Dining Room, where live piano entertainment is also available on select nights; enjoy craft cocktails, fire pits and breathtaking sunsets from Rooftop; or gather at the hand-carved mahogany Bar, where expertly prepared libations meet a lively, convivial atmosphere.

Born in Atlanta, GA, and raised in Miami, FL, Chef Cisco began his professional culinary journey at the age of 15, mastering the basics at a wok station in a Miami buffet. Drawn to the artistry of combining fire and the elements, he initially pursued a career in Chemistry but quickly realized his true passion, leading him to earn a degree in Culinary Arts from Johnson & Wales University. Upon graduating, Chef Cisco forged his fine dining career at Talula in South Beach, training closely under owner Andrea Curto-Randazzo, a competitor on Top Chef Season 7. Since then, he has managed several acclaimed restaurants across Florida, including Council Oak Steak & Seafood at the Seminole Hard Rock Hotel & Casino, Three60 Market, and 7th Avenue Social.

Havana Beach Bar & Grill is open daily for brunch from 8 a.m. to 2 p.m. and for dinner from 4 - 9 p.m. The bar and rooftop (weather permitting) are open daily from 11 a.m. to 10 p.m., with happy hour offered Monday through Thursday from 11 a.m. to 3 p.m. Seasonal hours apply.
